225g self raising flour
75g caster sugar
1 egg, beaten
Half a teaspoon of mixed spice
Sift the flour into a bowl and rub in the flour until it resembles breadcrumbs then mix in the sultanas, sugar and mixed spice. Gradually add the beaten egg and mix it up into a dough. You can add in some milk if itâ€™s a bit dry but donâ€™t add too much or it will become tacky. Roll your dough out on a lightly floured surface (a little thicker than a pound coin) and then cut into rounds with a cookie cutter.
Fry the Welsh cakes on a very lightly oiled frying pan or griddle for approximately 4 to 5 minutes on each side. They should be cooked until they are a golden brown colour. Be careful not to do them too quickly as they may burn on the outside and not cook properly in the middle. Serve with jam, butter or honey. Again, if you make to many they can be freshened up up in the microwave or grill.
